lotus root boiled down in soy sauce


Do you guys eat lotus root in your country??

This is really healthy side dish in south korea 🙂

< Ingredients >

lotus root 400g

1 tablespoon vinegar

a glass of water

1/3 cup of soy sauce

2 tablespoons maple syrup

2 tablespoons corn syrup

sesame seeds

Wash lotus roots well and peel them

cut into 0.3~0.4cm thick slices

In a bowl, pour water and add 1 tablespoon vinegar

Soak lotus roots in the water for 30 minutes

Rinse in the running water and boil for 5 minutes

Drain!

In a pan, put 1/3 cup of soy sauce and boiled lotus root.

Boil down

And then, add some corn syrup and maple syrup

When it’s cooked, sprinkle some sesame seeds.11

  1. I haven’t seen any fresh lotus root in the Korean supermarket here in the UK, only pickled. But have seen this banchan ready made so they must have it!
    Will have to find out as would like to make this dish 🙂
