Stir-fried squid

How do you release your stress?

Sometimes I eat super spicy food and it’s really helpful.

This is one of my favorites!!

< Ingredients >

2 squids

70g glass noodles

1 tablespoon grape seed oil

3 shiitake mushrooms

1 onions

2 green peppers

3 green onions

4 chilies

1 carrot

3 tablespoons soy sauce

2 tablespoons red pepper powder

2 teaspoons crashed garlic

2 teaspoons sesame oil

1 teaspoon sesame seed

Wash vegetables and drain them, then chop them like these pictures.

Place glass noodles in boiling water for 10 minutes and wash rinse with cold water.

Remove entrails and wash well.

Cut the squids into bite-size pieces.

Let squids marinate for 10 minutes.

With 1/2 this seasoning ( 3 tablespoons soy sauce+2 tablespoons red pepper powder

+2 teaspoons crashed garlic+2 teaspoons sesame oil+1 teaspoon sesame seed )

Place seasoned squids and stir-fry for 5 minutes in greased pan.

Add all prepared vegetables and the rest of seasoning.

Stir-fry them over medium heat from 5 to 10 minutes.

Voila, looks really good!!!

Mix boiled rice with stir-fried squid and enjoy!!

oh, don’t forget to prepare a glass of water or milk just in case 🙂

young radish watery kimchi

What do you think when you hear the word ‘kimchi’?

I guess you might think red and hot kimchi made with napa cabbage.

Yes, it’s the most common one but there are more than 100 kinds of kimchi in korea.

Today, I made young radish watery kimchi and this is a perfect side dish in summer.

not spicy at all and healty!

< Ingredients >

3 bunches of  young radishes

coarse salt

2 onions

3 gingers

8 red peppers

3 tablespoons crushed garlic

2 tablespoons red pepper powder

2 tablespoons flour

clean radishes. I don’t use the root of radishes but some do.

cut them in 4cm lenght

sprinkle with coarse salt  and leave for four hours

rinse well and drain them

put 2 tablespoons salt in 2 liters of water and boil it.

When it cools, strain 2 tablespoons red pepper powder through a sieve.

season with salt

grind 8 red peppers and 3 gingers

put radishes, onion slices, ground red peppers and gingers, and 3 tablespoons crashed gralic in the liquid.

Mix well. Add some add if it’s not salty enough.

Store in refrigerator up to 2~3 days.

Nice to make bibimbap with this kimchi and bean paste stew.

Azalea pancake

 

Azaleas are one of the most typical flowers, which signal the arrival of spring.

In the traditional Korean society, villagers enjoyed new spring eating azalea pancake or azalea rice cake.

Also, this pancake was a royal court cuisine in the Chosun Dynasty.

 < Ingredients >

nonglutinous rice powder 300g

Glutinous rice powder 300g

8 azaleas

2 tablespoons grape seed oil

1/3 teaspoon salt

Remove the pistil and stamen from azaleas

And strain the flowers after washing them with running water.

It’s ok to use only glutinous rice power but it was too chewy for me.

So I mixed glutinous rice powder 300g and nonglutinous rice poweder 300g.

Dissolve 1/3 teaspoon salt in hot water

and knead flour with the water

Make flat round pieces of dough

Oil the frying pan and cook over a low heat

Brown the dough on one side, then turn it over

Make a hole in the middle of dough with a chopstick

and put the flower in the hole.

It’s done when the dough is elastic and rose well.

add some honey if you like sweet pancake!
